No Bake Carmel cookies
I stick butter
1/3 cup gold monkfruit or brown truvia
1 cup heavy whipping cream
1 cup pecan halves
1/3-1/2 cup of unsweetened coconut flakes
Line a baking sheet with parchment paper. Melt butter in a sauce pan, add monkfruit or truvia and stir until combined. Add heavy cream and whisk for about 10 minutes until it starts to froth up. Then remove from heat and add pecans and coconut. Let sit for a couple of minutes to cool down slightly. Then spoon onto parchment paper and put in the refrigerator until they are solid, 30 minutes or so.
These will be delightful tastes of heaven. Make sure you keep them refrigerated, though.
