Keto Pig Dessert AKA Sex in a Pan

A little slice of heaven!

Keto Pig Dessert A.K.A. Sex in a pan

**I just want to warn you upfront that this is not a super
easy or fast dessert and it makes a lot of dirty dishes, but it is heaven!! 

Ingredients:

1 ½ cup almond four

½ cup pecan meal (or put pecans in your food processor)

1/3 cup butter

8 ounce brick of cream cheese (room temperature)

1/3 cup unsweetened cocoa powder

Powdered Swerve DIVIDED

Tablespoons for the crust

              ¼ cup for
the cream cheese layer

              1/3  cup for the chocolate layer

Tablespoons for the whipped cream top layer

Heavy Whipping Cream DIVIDED

              ¼ cup for
the cream cheese layer

              1 ½ cups
for the chocolate layer

              1 ½ cups
for the whipped cream top layer

Vanilla extract DIVIDED

              ½ teaspoon
for the cream cheese layer

              ½ teaspoon
for the chocolate layer

              ½ teaspoon
for the whipped cream top layer

Lily’s chocolate chips or dark chocolate for shaving

Instructions:

Preheat the oven to 350°.  Butter a 9×9 pan.  I used a smaller oval dish, but it was too
small.  ( I used my Kitchen Aid mixer for
everything, so there was a lot of washing in between layers.)  Melt the butter and add it to the almond
flour, pecan meal and 2 Tablespoons of powdered Swerve in your mixer bowl.  Combine all ingredients until the mixture is
crumbly.  Press this mixture into your
buttered pan and bake until golden brown. 
(14-18 minutes)  This layer needs
to cool before you can proceed.  I set
mine on my patio on a cool night for a few minutes. 

The cream cheese layer goes next.  (For the rest of the layers, a cold bowl,
mixer and heavy cream works best.)  Start
with the ¼ cup of heavy cream, ½ teaspoon vanilla and ¼ cup powdered swerve in
your mixing bowl.  Beat this until stiff
peaks begin to form.  Then gradually add
the cream cheese until all is combined. 
Once your crust is cool, add the cream cheese mixture to the crust.  I warmed my mixture up slightly in the microwave
to make it spread easier.  My crust was
delicate. 

Next step is the chocolate pudding layer and it starts like
the last one.  In a cool mixing bowl, start
with 1 ½ cups of heavy cream, ½ teaspoon vanilla and 1/3 cup of powdered Swerve.  Mix until stiff peaks begin to form.  Gradually add the cocoa powder until it is
all combined.  This goes right on top of
the cream cheese layer.

The last layer is a whipped cream layer.  Again, start with a cold mixing bowl.  Add 1 ½ cups of heavy cream, 2 Tablespoons of
powdered Swerve and ½ teaspoons vanilla. 
Mix until stiff peaks form and then spread it over the chocolate
layer.  I topped mine with Lily’s
chocolate chips, but you could put dark chocolate shavings instead.
